{For the Love of Quinoa-Day FOUR} Quinoa Fried Rice
MMMmmmm....who doesn't like fried rice?
Fried Quinoa?!? Even better!
My kids just loved this and that is totally awesome in my book because it is just PACKED with veggies. Thankfully they eat most veggies anyways, but I think even for those that don't this will be a hit.

Quinoa Fried Rice
2 T. Coconut Oil, divided
2 Large Eggs, beaten
2 Garlic Cloves, minced
1 Small Onion, diced
8 oz. Mushrooms, diced
1 head Broccoli, cut into florets
1 Zucchini, chopped
1/2 c. Frozen Corn
1/2 c. Frozen Peas
1/2 c. Shredded Carrots
3 c. Cooked Quinoa
1 T. Fresh Ginger, grated
4 T. Low Sodium Soy Sauce
Optional: Sriracha Sauce

Heat 1 T. Coconut Oil in Wok or large skillet
Add garlic and onion and cook until translucent, 3-5 min.
Add mushrooms, zucchini, and broccoli, cooking just until tender, 5-7 min.
While your veggies are cooking, cook eggs on med-low in a small skillet, flipping only once. Cut into small pieces and set aside for later
Add carrots, peas, corn and quinoa, cooking just until heated. Add soy sauce, mixing well
Add in your diced eggs and stir. Serve immediately!
