{For the Love of QUIONA-Day Two} Quinoa Stuffed Bell Peppers
I know it is only day two of sharing the Quinoa love, but I am getting even more excited as I am prepping for the rest of the week!
We LOVE some bell peppers around here, the red especially, so I am always looking for new ways to use them in our meals. My 2 year old would eat them like apples if I let him!
We have done a variety of different "stuffed" peppers since eating cleaner, one of my favorites being the Philly Cheese Steak....aaaand since we LOVE Quinoa this week, we had to make a little somethin' somethin'.....

4 Bell Peppers, cut in half
3 c. cooked Quinoa
1 c. Black Beans
1 c. Frozen Corn
1/2 c. Diced Tomatoes with Green Chiles
1/2 c. Pepper Jack Cheese, shredded
1/4 c. Feta Cheese, crumbled
1/2 t. Chili Powder
1 t. Cumin
1 t. Garlic Powder
1/2 t. Onion Powder
1 t. Salt, or to taste
1/4 c. Pepper Jack Cheese, shredded
Mix all ingredients together
Place peppers on a lined pan.
Fill pepper halves and sprinkle with 1/4 c. pepper jack cheese.
Bake at 350 degrees for 40 minutes.
Enjoy!
They really taste AMAZING! The filling would be great as a side as well....I could eat it for every meal I think ;)
